I have been plagued by my attempts to produce a luscious gluten-free cake with no refined sugar! It seemed to be simply a matter of finding an interesting recipe and then trying it out. I am not Celiac or allergic to wheat products but I do have family members who are. To my despair, not all GFR (Gluten-free Recipes) are the same and I am sure anyone at "Kinnikinik" would have been able to tell me that! That being said, my ego propelled me to find a GFR that not only was flavorful but moist with subtle crumb....now remember I am ambitious. I made more attempts than I care to admit but the majority of the GFR's I tried produced "hockey pucks", good for little else! After a few mild successes, I began to "tweak and fuss" over these precious few recipes till I joyously proclaimed victory - I have 4 new additions to The Stanley Cupcake repertoire: please take a look and see if one of them tickles your fancy!
